JAKARTA - The price of this very delicious one tablespoon of ice cream may be more expensive than all the ice cream you have eaten over the summer, because it contains premium ingredients in it.

The dessert, called byakuya - "white night" in Japanese - is currently being sold for 880,000 yen (Rp 94,191,084) for one portion, which officially makes it the most expensive ice cream in the world, according to Guinness World Records.

Japan's ice cream brand Cellato has called the white night a gelato on its website, and the name is a clue about its origins from Italy.

The main ingredient is a rare white fungus grown in Alba, Italy, at a price of 2 million Japanese yen (USD 14,500) per kg, citing the Guinness World Records website, which also mentions another special ingredient, Parmigiano Reggiono.

This ice cream is decorated with edible gold leaves, two types of cheese and "Sakekasu", a pasta-like ingredient that comes from the process of making sakes.

"We took more than 1.5 years to develop it, with many trials and errors to get the right taste," a representative from the company told Guinness World Records.

The company said its mission was not only to make delicious and expensive desserts, but also to create culinary adventures that combine European ingredients and traditional Japanese foods.

To that end, they invited Tadayoshi Yamada, head of chef at RiVi, a restaurant in Osaka famous for its French-Japan dish, to direct the project, according to Guinness World Records.

The dessert is available for sale in Japan and sent directly to consumers, according to the Cellato website.

Tasting this ice cream is done with almost the same accuracy, because Cellato sets careful steps to regulate how to consume this food upon arrival.

Consumers were instructed to pour the whitexiquid with the right texture as the ice cream softened, before mixing it with handmade metal spoons given to them.

They are advised to let ice cream melt at room temperature or heat it in a microwave with a power of 500 watts for 10 to 20 seconds, if the texture is too hard.

Although the Guinness World Records team has not had the opportunity to taste this dessert, Cellato previously offered a taste session for his staff, which described his treats to the record-keeping body as "rich taste and texture."

In addition, they also recommend blending with French white sakes or wines when tasting them.

Cellato, which also offers a black dumpling-based dish on its menu, said it plans to diversify its very expensive product lines by including champagne andvillery in the future.
