JAKARTA - Ahead of its sixth anniversary on November 3, 2026, Bipang Ambawang marked its business journey by opening its fifth branch in Green Lake City on July 31, 2026. In the past six years, this restaurant that carries Dayak cuisine has grown from a business that started from a longing for home to a brand that introduces the taste of West Kalimantan to various cities in Indonesia.
Bipang Ambawang owner, Juniarto, said the birth of Bipang Ambawang started from his desire to bring back the taste that has become part of his childhood in the Dayak land. This longing was then realized through a restaurant that not only serves typical food, but also brings the Dayak cultural identity to a wider community.
"Since its inception, my vision has been to introduce Dayak cuisine and culture to Indonesia and the world. Dayak food is not only for Dayak people, but can be enjoyed by all tribes," said Juniarto.
According to him, building Bipang Ambawang is not only opening a culinary business, but also an effort to introduce the richness of Dayak gastronomy, which has not been widely known outside Kalimantan.
The commitment, said Juniarto, is starting to bear fruit. One of the signature dishes, Daukng Manggala Tutuk, which was previously not widely known to people outside Kalimantan, is now one of the favorite dishes of customers at various Bipang Ambawang outlets.
"Before Bipang, many people outside Kalimantan, including in PIK, had never tasted Daukng Manggala Tutuk. Today it has become one of the best-selling menus. That proves that Dayak cuisine can be very well accepted by the Indonesian people," he said.
Since its inception in 2020, Bipang Ambawang continues to expand its business network. Currently, the restaurant is present in Ambawang, Pontianak as a flagship store, East Coast Pantai Indah Kapuk, I.D.D Pantai Indah Kapuk 2, Hampton Square Gading Serpong, and the latest branch at La Vela Green Lake City.
In its development, Bipang Ambawang carries two restaurant concepts. The Heritage concept presents the atmosphere of the Dayak culture through ethnic interiors, live performances roasting grilled pigs, to the sound of traditional sape music. Meanwhile, the Signature concept offers a premium modern dining experience with a focus on food quality, service, and visitor comfort.
Bipang Ambawang's business journey was also followed by strengthening corporate governance. Currently, the brand's operations are under the management of PT BAF as part of the company's future business development strategy.
In addition to expanding the restaurant network, Bipang Ambawang also pays attention to the empowerment of human resources from the Dayak community. Juniarto said that about 70 percent of his employees were Dayak sons and daughters who received service, hygiene, and restaurant operational standards training in accordance with national standards.
"We want to show that Dayak identity is not only through food, but also through friendly, polite, and professional service. In that way, people can see the real Dayak culture, which is a noble, open, and hospitable culture," he said.
Juniarto hopes that more business actors will introduce Dayak cuisine so that the cultural wealth of Kalimantan can be known more widely by the Indonesian people.
"I hope that one day the typical Dayak cuisine will be better known and easier to find in various cities in Indonesia. Not only the main dish, but also the typical companions such as Daukng Manggala Tutuk can be known and enjoyed by more people. We also introduce the Dayak language through the names of the menu as part of efforts to preserve culture. The more restaurants that introduce Dayak cuisine, the greater the opportunity for our culture to be accepted, appreciated, and loved," concluded Juniarto.
