Indonesia Needs Modernation Of Traditional Food Making Process, One Way To Do It By Using Machines

JAKARTA - Chairman of the Association of Food and Beverage Entrepreneurs (Gapmmi) Adhi S Lukman said that Indonesia needs to industrialize and modernize traditional food processing using machine technology.

According to Adhi, this aims to improve the quality, taste and size that are uniform compared to the manual manufacturing process. Adhi said, with the same standards, the global market for the Indonesian food and beverage industry is increasingly wide open.

"Sometimes the global market wants something good, packaging is interesting, not big or small. So there is traditional food industrialization," said Adhi when met at the "Problem-Solving Forum: Indonesian Food Technology Overseas Expert System 2023" event in Jakarta, quoted from Antara, Tuesday, July 25.

Adhi said the use of machine technology in traditional foods can increase productivity and efficiency. In addition, with the latest technology, it can make product packaging more attractive and guaranteed for its hygiene.

Furthermore, one of the countries that has implemented the use of machine technology in processing food is Taiwan. According to Adhi, the results of Taiwan's innovation were able to create machines to make food such as dimsum, nastar to onde-onde.

Adhi said, there is the potential for cooperation between Indonesia and Taiwan. According to him, Indonesia does not yet have machines that can be used by the food and beverage industry, on the other hand, Taiwan can be the main destination for exports of the food and beverage sector.

Indonesia and Taiwan through the Bureau of Foreign Trade (BOFT) have collaborated a lot, starting from exchanging halal information, trade exhibitions, developing industrial technology, processing resources to facilitating inter-state visits to improve the MSME industry.

"From their technology and machinery, we have entered a lot, on the other hand, we also want the results of our food production to be exported to Taiwan," said Adhi.

The use of machines called Adhi can also accelerate the industrial revolution 4.0. Indonesia is still quite lacking in the use of modern tools.

According to Adhi, the government through the Ministry of Industry provides support in the form of discounted prices for the purchase of machinery and equipment for small and medium industries (IKM) by 25-35 percent. A 25 percent discount is given for the purchase of imported machines and 35 percent for domestically produced machines.

"The engine does need investment. We encourage some of our members to use machines, now they can export, it was only local, now it has been exported," said Adhi.
