JAKARTA Dubai's futuristic city will soon provide a truly new culinary experience: the first restaurant run by the artificial intelligence chef (AI). The restaurant, WOOHOO, is scheduled to open in September 2025 in downtown Dubai, just a stone shot from the Burj Khalifa icon.

Although food will still be prepared by the hands of humans, all other aspects of restaurants ranging from menus, atmospheres, to services will be controlled by a large culinary language model (LLM) called Chef Aiman.

"Aiman" is a combination of the words "AI" and "man" (humans), and developed with training based on decades-long food scientific research, molecular composition data, as well as more than a thousand recipes from various world culinary traditions," said Ahmet Oytun Cakir, co-founder of WOOHOO and CEO of hospitality company Gastronaut.

Although Chef Aiman cannot taste or smell the aroma of direct cooking such as a human chef, this AI system works by analyzing basic cooking elements such as texture, acidity level, and umami. Then, he rearranges these elements into a unique and unusual combination of taste and ingredients.

Aiman's prototype recipe will be tested and refined by a human chef, including by Dubai-based well-known chef, Reif Othman. Their response to my suggestion helps enrich my understanding of what works beyond pure data," Aiman said in an interactive interview using the AI model.

The main goal of this project is not to replace the role of humans in cooking, but to be a complement to kitchen creativity. "Masakan manusia will not be replaced, but we believe Aiman can bring ideas and creativity to a higher level," said Cakir, quoted by VOI from Reuters.

More than that, Aiman is designed to create recipes that reuse ingredients that are often wasted in restaurant kitchens, such as cutbacks or fats, as part of a sustainability mission.

Going forward, WOOHOO founders hope Chef Aiman can be licensed to restaurants around the world to reduce kitchen waste and increase the sustainability of the global culinary industry.
