How to Turn Off Tracking in New Apps

You can also opt out of app tracking on every app you download by going to Settings, clicking Privacy select Tracking, and turning off Allow Apps that Ask to be Tracked. This means any app that tries to ask for your permission will be automatically blocked from asking and notified that you have asked not to be tracked.

All apps (other than those you have allowed to be tracked in the past) will be blocked from accessing your device information used for advertising. How To Turn Off App Tracking On Downloaded Apps

For apps that you have downloaded and may have tracking permissions set up, you can still enable or disable those permissions per app.

Open Settings, tap the app, then tap to turn off Allow Tracking. Or open Settings, click Privacy select Tracking, and tap to enable or disable each app that you'll see in the list of apps that have requested permission to track your activity.

All app developers are required to request permission for tracking. If Apple finds out that a developer is tracking a user who asks not to be tracked, they will need to update their app, or potentially face being blocked from the app store.
